Curry Puffs
Seems appropriate to pair with the butter chicken.

Ingredients
- 500g chicken breast or mince
- 2 tbsp Thai green curry paste
- 1 can coconut milk (only use half)
- 1 tsp brown sugar
- 1 tsp fish sauce
- 1 - 2 tsp corn starch
- 1 tbsp lime juice
- 1/2 tbsp basil
- 2 tbsp garlic minced
- 1 egg
- Frozen veg - amount and variety to taste
- Puff pastry
Directions
- Cook off mince and veg.
- Add all other ingredients except for corn starch.
- While mix is cooking slowly add corn starch until desired thickness is reached.
- Cool cooked mix in fridge.
- Cut puff pastry in quarters, add cooked mixture, and fold into triangles.
- Mix egg in a small bowl and mix well.
- Baste the puffs with egg.
- Cook in oven until golden.
