Ingredients

  • 500g chicken breast or mince
  • 2 tbsp Thai green curry paste
  • 1 can coconut milk (only use half)
  • 1 tsp brown sugar
  • 1 tsp fish sauce
  • 1 - 2 tsp corn starch
  • 1 tbsp lime juice
  • 1/2 tbsp basil
  • 2 tbsp garlic minced
  • 1 egg
  • Frozen veg - amount and variety to taste
  • Puff pastry

Directions

  1. Cook off mince and veg.
  2. Add all other ingredients except for corn starch.
  3. While mix is cooking slowly add corn starch until desired thickness is reached.
  4. Cool cooked mix in fridge.
  5. Cut puff pastry in quarters, add cooked mixture, and fold into triangles.
  6. Mix egg in a small bowl and mix well.
  7. Baste the puffs with egg.
  8. Cook in oven until golden.
